My brother Nathan is quite a bit younger than I am – enough so that when I moved out of the house for college he was also shorter than me. Not so any more.<\/p>\n

\"Nathan\"<\/p>\n

(Nick is the shorter one, and he’s not actually short.) It was rather interesting seeing Nathan once or twice a year, on school breaks. He was several inches taller each time. Wow.<\/p>\n

That was a while ago, of course, and now he’s married to Laura and they just bought a lovely old fixer-upper house last summer.<\/p>\n

When Nate was in elementary school, he learned how to make “Dutch Mini-pancakes.” These thin wafers slathered in butter and coated in powdered sugar were a favorite, and were<\/i> very, very tasty. I don’t remember why his class learned about them – maybe he will leave a comment and tell us. <\/p>\n

When I was in the Netherlands this fall, I had the opportunity to try the real thing.<\/p>\n

\"Nathan\"<\/p>\n

They’re called poffertjes<\/a>, and unlike the ones Nathan made, are very puffy. His were more like mini-crepes. The butter and powdered sugar part was the same, and both kinds are yummy. (In fact, I’m making myself hungry right now!)<\/p>\n

So Nate, do you still have the recipe? We should have a pancake cook-off! Flat and puffy Dutch pancakes, with lots<\/i> of powdered sugar. <\/p>\n
