{"id":240,"date":"2008-10-10T17:44:37","date_gmt":"2008-10-10T22:44:37","guid":{"rendered":"http:\/\/stringpage.com\/blog\/?p=240"},"modified":"2008-10-10T17:44:37","modified_gmt":"2008-10-10T22:44:37","slug":"cookie-nomnomnom","status":"publish","type":"post","link":"https:\/\/www.stringpage.com\/blog\/?p=240","title":{"rendered":"Cookie nomnomnom"},"content":{"rendered":"<p>Since my previous attempt to make <a href=\"https:\/\/willshetterly.blogspot.com\/2008\/04\/shetterly-finest-kind-cookies.html\">Will Shetterly&#8217;s Finest-Kind cookies<\/a> met with such <a href=\"https:\/\/stringpage.com\/blog\/?p=178\">great approval<\/a>, I thought I&#8217;d give it another shot.<\/p>\n<p>Having done it once, I had to tweak the recipe a bit. Here&#8217;s the latest incarnation:<\/p>\n<p>      1\/2 cup butter (reduced from 3\/4)<br \/>\n      1 cup firmly packed brown sugar<br \/>\n      1\/2 cup honey<br \/>\n      1 egg<br \/>\n      1\/2 cup unsweetened applesauce (replacing apple juice, some butter)<br \/>\n      1 tsp. vanilla<br \/>\n      3 cups uncooked rolled oats<br \/>\n      1 cup white whole wheat flour (change from regular)<br \/>\n      1 tsp. salt<br \/>\n      1\/2 tsp. soda<br \/>\n      1 tsp. cinnamon (up from 1\/2)<br \/>\n      1\/4 tsp. nutmeg<br \/>\n      1\/8 tsp. cloves (added)<br \/>\n      3\/4 c semi-sweet chocolate chips (reduced a bit)<br \/>\n      1 cup slivered almonds, toasted (modification)<br \/>\n      1\/2 c <a href=\"https:\/\/www.nutsonline.com\/nuts\/cacao\/organic-nibs.html\">cocoa nibs<\/a> (addition)<\/p>\n<p>Do the usual cookie thing with them, or see the link above for the full directions. These were &#8220;clean out the cupboard&#8221; cookies, so I used all the almonds, all the oatmeal, all the chocolate chips.<\/p>\n<p>I didn&#8217;t soften the butter because the microwave is full of wool. (Go on, act surprised), but it&#8217;s better if you do. And I highly recommend not getting honey in the laptop. I didn&#8217;t, but it was close.<\/p>\n<p>Verdict: The flavor is good &#8211; the cocoa nibs are an excellent addition to this not-too-sweet cookie. I shouldn&#8217;t have messed with the butter, though. The first batch, formed into balls, did not flatten and came out rather cakey.
